The short version
Everyday apps store what you create locally on your device. They don't require accounts, don't include advertising or analytics SDKs, and don't transmit your data to the developer. Purchases are handled by Apple through the App Store; the apps never see your payment details. If you email support, the message you send is used only to respond to you.
